Okay this is probably a long shot question here.  Does anyone here eat eggplant and if so what is the best way too cook it?  Nuri bought one for me and is going to cook it as soon as I find a recipe for it.  Thanks.

NO!  We cannot deep fry it!    :blink: :lol:  Eggplant is like 90% water and will absorb the oil like a sponge.  Also the whole point of buying it is to make an effort to eat healthier.  Frying it negates that purpose.

They baked it in slices  with cheese on top.  Blech.  I can't eat veggies and cheese like that, it makes with the sick feeling.  I think I'll buy another sometime and steam it like Faye said.

Yeah that's the best way in my opinion. I mean, I never liked eggplant, but when I tried it like that (or fried with tempura) then it was yummy.

Hahaaa i just remembered that in one episode of Iron Chef, they used eggplants as their main ingredient! Maybe you should look that episode up :-D
