Okay, I lied.  Nothing's really improved, it's just new.  Anyway, I always thought I was a decent cook.  I guess I am, generally speaking.  I tend to be hard on myself sometimes.  But I didn't realize until, like, this year or last year that I was overcooking my food.  :joe:  I haven't been cooking as often as I'd like to these days and now when I am in the kitchen making something, it became urgent that I cook it as fast as possible so that I could leave the kitchen as quickly as possible.  In doing so, I've been cooking the juiciest chicken and the moistest eggs ever.  I still need to master making moist red meat.  And I still have problems with making a perfect, moist chicken breast.  But I've conquered fucking tenders.  Juicy as fuck.  :aroused:

Me, too. What are we talking about, again?

I don't cook like I used to when I was in college. But I grill like a fiend. My method is to get the grill near the coronal temperature of the sun, throw the meat on (covered in canola oil to prevent sticking and sprinkled with my favorite favoring, Steak and Chop), sear both sides, and then cook to proper temp if its steak. It comes out juicy with a brown/reddish pink/brown layering. Burgers are ready when the red juice that cooks out starts to taper off and mingles with clear juice. Take them up before they're to your desired doneness, as they'll continue to cook as they cool.

Oh, you!  But, yeah, sadly I'm in my mid-thirties and am just now getting the whole "red meat being medium done" thing.  I was a well-done creature all of these years but it tastes too dry now.  Another thing I'm doing now... tea + lemonade.  I know that's all old and shit, but for decades I hated the tiniest bit of lemon in my tea.  It repulsed me.  And now I'm craving the shit for some reason.  I kinda feel like I might be going through early menopause, so that could potentially be a reason.  Like, lady hormones + age + ?? = (tea + lemonade) - overcooked meat or something something.

Early menopause is a thing tho'.  Given the general rarity of it, however, I probably just have a hormone imbalance due to stress.

Snackwells used to make these lemon sandwich cookies that were my freakin' fave.  The cookies weren't too crunchy and the lemony icing wasn't too sugary or too tart.  I haven't been able to find anything remotely like them since.

As for cooking, my main concern is speed and not silly little details like taste or nutricion value. When I'm just cooking for myself I refuse to spend more time preparing my food than I'll spend eating it 😂

Believe it or not I refuse to have any helper/maid/nanny at home. I just don't like unknown people having access to me, kids and stuff. Im also very against nannies raising my own kids (you can say I learned from my parents' mistakes).
 
I only have a cleaning lady that comes once a week for a couple of hours to do a "deeper cleaning" and thats it.

I've never heard of it, and my google-fu indicates that it's likely a Hispanic thing. But it looks like a barbeque variant, as if the name didn't already connote that. When I read that it was made from meat from cattle heads, I was afraid it was more akin to hogs head cheese/souse, which I never was a fan of. But the pictures I found of it looks a lot like regular pulled pork.

Never had barbacoa, but I'd be willing to give it a go.

Although I don't think I could eat it with eggs. I don't really like eggs unless they are really mixed in with a lot of other flavors, like on a breakfast pizza or the like. Eggs just don't have enough flavor for me to eat on their own.

When you said barbacoa I thought of the brasillian-style restaurant. Do you mean pulled beef? I think that name for that dish might be a central american thing, in south america we call that asado.

I tried Vanilla Latte poptarts.  It doesn't really taste coffee-ish enough for me.  I wish they had made it stronger coffee-wise.  I ate half of one cold and the flavor came out much stronger but the filling was, um, goopier, I guess.  Coldness really brought out the cr0n syrup and cr0n starch.  Not a great texture to it.

Have you tried making your own? I saw a recipe for "rainbow poptarts", seemed pretty easy.

Made some strawberry jam (without pectin). Preeettay preeeettay preeettay good, and only 3 ingredients 8)

Btw Nuri, the lady from Cooking with Dog (youtube channel) has a video about doing coffee jello that is delishhh. And its not  unhealthy. Also, super easy.

I made potato and beef croquettes. They came out delicious but I'm not sure if worth the level of effort. I have to make mashed potatoes, then cook beef with onion, then mold them into patties, chill them, coat them with flour/egg/breadcrumbs, and chill them again before I can fry them. It's not like it's hard or anything but I don't like too many steps when making my food.

I had leftover ingredients and made more today.
Second go was much easier. I don't make the tonkatsu sauce but eat it plain with some mixed vegetables.

I'm about to bail on the usual concept of meals and food for a few months in an effort to drop some post-injury/post-rona/post-college poundage, and a preacher buddy of mine swears Optavia is the second coming of diets. We'll see. At least my wallet will be lighter.
