Mmmm, Pumpkin Bread
« on: Sep 22, 2008, 05:14:12 PM »
I'm cooking Pumpkin Bread in honor of the equinox, and god damn my house just smells amazing. 41 minutes left! Then I will toast it after it cools and serve it with a scoop of vanilla bean ice cream.

Quote
2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
3 cups shredded fresh pumpkin
1 cup toasted pumpkin seeds

Preheat the oven to 325 degrees F.
Sift the flour, cinnamon, baking soda, baking powder, and salt together.
In a separate bowl, mix the sugar, vegetable oil, eggs, and vanilla. Combine both mixtures and fold in the shredded pumpkin and pumpkin seeds. Once the ingredients are all incorporated pour into a non- stick 9 by 5 by 3-inch loaf pan. If your pan is not non- stick coat it with butter and flour.
Bake for 1 hour and 15 minutes. At this point a knife inserted into the middle of the loaf should come out clean. Cool for 15 minutes and turn out onto a cooling rack. Cool completely.

I said its hot outside let me go swimming in your eyes;
We been running for awhile. Why don't you lay dow, I'll make you smile.
I could never ask for nothing better than this;
It's just tequila and the beach, it's quite salty when we kiss.

Sounds Yummy.  Can I use canned pumpkin?  I hate to do battle with an actual pumpkin.

IHOP should have the annual pumpkin pancake option any day now.

I made Cranberry Orange bread the other day, but I cheated and used a box.

I found a great (so said the reviews) recipe for Pumpkin Apple Cobbler, but I couldn't find any pumpkin butter in the grocery store that usually has an awesome selection.  I searched in the jam section, the butter section, the produce section and in the health food section that had almond, hazelnut, and even apple butter but not pumpkin!  This was just last week, so I'm guessing pumpkins aren't quite ready to be churned into butter yet.
The wife forgave the mistress for she only entertained.

Made from scratch is so much better.

10,000 steps down, round and round. One night on the town and I'm hellbound ... Black oceans beneath, come and swallow me. My little tower, seal my fate. Help me pay back, end their hate. Black oceans beneath, come and swallow me

Since I'm surfing with images shut off, I guess I'll have to wait to be horrified.  I read the title of the post as "Pumpkin Head".  Merla knows what I'm talking about.

Kinda sounds like you're supposed to get the pumpkin and shred the insides yourself.

I can finally see that cat now.  Jeez.... :lol:

Get a little teensy pumpkin.  The big ones are pretty flavorless, except for the toasted seeds.

You can use the seeds in a salad!

Damn skippy...Hell half the time I throw away all the inside crap just to carve a Jack-O-Lantern. But then again Halloween is one of the few Holidays I actually like.

Libby's canned pumpkin, the large can (not like campbell's size). I didn't use the seeds, though some markets do sell pumpkin seeds.

My Japanese teach first came to America and went to Amish country. She didn't think America was civilized until after she went into the city.

She signed up for study abroad, and they sent her to Lancaster Pennsylvania. She went back to Japan a year after thinking all Americans were backwards rednecks. She came back and went to FSU, and realized America wasn't so bad. But still, Imagine going from Nagoya to Lancaster, PA.
