Title: Mmmm, Pumpkin Bread

I'm cooking Pumpkin Bread in honor of the equinox, and god damn my house just smells amazing. 41 minutes left! Then I will toast it after it cools and serve it with a scoop of vanilla bean ice cream.

2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
3 cups shredded fresh pumpkin
1 cup toasted pumpkin seeds

Preheat the oven to 325 degrees F.
Sift the flour, cinnamon, baking soda, baking powder, and salt together.
In a separate bowl, mix the sugar, vegetable oil, eggs, and vanilla. Combine both mixtures and fold in the shredded pumpkin and pumpkin seeds. Once the ingredients are all incorporated pour into a non- stick 9 by 5 by 3-inch loaf pan. If your pan is not non- stick coat it with butter and flour.
Bake for 1 hour and 15 minutes. At this point a knife inserted into the middle of the loaf should come out clean. Cool for 15 minutes and turn out onto a cooling rack. Cool completely.

I made Cranberry Orange bread the other day, but I cheated and used a box.

I found a great (so said the reviews) recipe for Pumpkin Apple Cobbler, but I couldn't find any pumpkin butter in the grocery store that usually has an awesome selection.  I searched in the jam section, the butter section, the produce section and in the health food section that had almond, hazelnut, and even apple butter but not pumpkin!  This was just last week, so I'm guessing pumpkins aren't quite ready to be churned into butter yet.

I used Canned. It still tasted fuckwin. Thursday I'm making cranberry-orange bread. :D

Libby's canned pumpkin, the large can (not like campbell's size). I didn't use the seeds, though some markets do sell pumpkin seeds.

Not ball related but Merla finally made the bread.  She messed up the first time around because she substituted canned for shredded directly instead of using less.  There was a thick layer at the bottom of the bread.  The second time around it came out pretty good.  I like my pumpkin muffins better though.  :)

I made it this morning with some autumn roast coffee and cranberry sauce (real sauce takes no effort, just dump the berries in a sauce pan with some juice and a spice-ball and let it simmer for 20 minutes).

Now me and Kary are sitting down to our meal. BIEN PRO HECHO!

Fresh shredded pumpkin you make yourself is light and full of air while the canned pumpkin is thick, heavy, and compact.  If you need to use canned pumpkin to substitute for the three cups of fresh shredded pumpkin, you can't just use three cups of canned.  You need to use less so you don't make the bread heavy and it cooks properly.

I would go with one cup of canned pumpkin (or possibly even a little less).  If you buy a big can, you don't want to use the whole thing.

I'm never eating any kind of fruit bread again.

I had some apple bread and I got some sort of heart burn like reaction...but it wasn't all gross acid liquid coming up feeling.  It was just pain.  Every time I swallowed I would get consumed with such intense pain in my chest (so bad that I could feel it in my back and lower jaw too)  that I couldn't sit still and had to walk it off, howling my agony into the night.

Now I know how Carcaroth felt after he swallowed the silmaril.
